Blueberry Cheesecake Flapjacks

I was just sent this great looking recipe for Blueberry Cheesecake Flapjacks from Taste of Home as part of their Mother’s Day brunch recipe feature.

I can’t wait to give it a try! How could these be bad??

Taste of Home’s Blueberry Cheesecake Flapjacks
Makes 12 pancakes

Ingredients:

  • 1 package (3 ounces) cream cheese, softened
  • 3/4 cup whipped topping
  • 1 cup all-purpose flour
  • 1/2 cup graham cracker crumbs
  • 1 tablespoon Domino® or C&H® Granulated Pure Cane Sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs, lightly beaten
  • 1-1/4 cups buttermilk
  • 1/4 cup butter, melted
  • 1 cup fresh or frozen blueberries
  • 3/4 cup maple syrup, warmed
  • Additional blueberries, optional

Directions:

  1. For topping, in a small bowl, beat cream cheese and whipped topping until smooth. Chill until serving.
  2. In a large bowl, combine the flour, cracker crumbs, sugar, baking powder, baking soda and salt. Combine the eggs, buttermilk and butter; add to dry ingredients just until moistened. Fold in blueberries.
  3. Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown. Spread topping over pancakes.
  4. Top with warm syrup; sprinkle with additional blueberries if desired.

Yield: 12 pancakes (3/4 cup topping). Editor’s Note: If using frozen blueberries, do not thaw them before adding to the pancake batter. Be sure to thaw any berries used in the optional garnish.

Gingerbread House Competition to Support Rosie’s Place

Make a gingerbread house and support a good cause!

GINGERBREAD HOUSE COMPETITION

Boston (September 10, 2008) – Chefs and culinary students from across the region are invited to create gingerbread houses of varying sizes to be sold, with proceeds to benefit Rosie’s Place, an organization created in 1974 to provide a safe and nurturing environment for poor and homeless women to help them maintain their dignity, seek opportunity and find security in their lives. The gingerbread creations will be entries in the 15th annual Gingerbread House Competition to be held in conjunction with THE 22th ANNUAL CHRISTMAS FESTIVAL, a celebration of crafts and specialty foods, held at Boston’s World Trade Center on November 7-9, 2008.

A panel of celebrity judges and children will select winning gingerbread houses based on creativity, decoration and taste. Houses will be displayed at the Christmas Festival, with signs crediting donors and chefs. Individuals and corporations may purchase these spectacular gingerbread houses and, after the event, may take their confectionery domains to be enjoyed at their home, office, or to be donated to a hospital, school or other organization.
